Oh dear I give up, QUAIL EGGS, 1 KG MUSHROOMS, 3 DUCKS, BEETROOT!!!!

Yes, you guessed it, my husband went shopping today.

How do I cook quail eggs?

What do I do with all that mushroom?

What can I do with fresh beetroot?

And 3 ducks????

I will have to ask his aunt to come cook with me. She is a master of duck.

Quails eggs nice on their own as a snack with celery salt for dipping in. Or with smoked salmon atop blinis.

Mushrooms always cook down to nothing anyway, so perhpas a nice steak and mushroom casserole or mushroom soup.

Fresh beetroot is wonderful over roasted in chunks tossed in olive oil and sea salt. Serve on a bed of couscous with pine nuts. Or grate into salads.

Ducks- not really my thing- too fatty

thing with duck is to roast it slowly and drain the fat off regularly. If you score the skin on the breast and roast it face down the fat will melt out and you can pour off. the roasting face down will mean that the meat is not utterly dried out .....

ohh...forgot to say. DOn't throw the duck fat away. Freeze it in and you can use it to roast potatos with....seriously yumm

Quail eggs - 1 and half minutes in salted boiling water for soft boiled (rinse immediately in cold water), four minutes for hard boiled.

Or you can make dear little miniature fried or poached eggs which little girls adore .

Please do watch out for the source of the quails eggs though, I didn't realise that they were battery farmed which is very cruel as quails need to fly. I always try to buy free range chicken but it just didn't occur to me to look out for "free range" quail.

Mushroom soup.

Tiny quail eggs on toast or blinis.

Beetroot- grated with vinaigrette like carrots- you don't get pink pee if you eat it raw. Or borscht.

Duck- 1 or 2 in freezer, other in hot over on grid, have it roast. Yum. Don't forget to save the resulting fat- capital for roast potatoes or pastry.

I love the idea of sauteed musrooms on toast. Think it will be good in omelette too. And soup, love mushroom soup.

He also bought smoked salmon, so I think I will have some toasted squares with smoked salmon and quail egg!

Boorscht (sp) is a good idea. He is Polish. Will earn me some brownie points.

He wants me to make Hoi Sin Duck in pancakes, with lettuce, cucumber and soy sauce???
