Aubergine Parmigiana as a side to ? (Not chicken)

A friend has given me a couple of aubergines which I'm going to use for a firm family favourite aubergine parmigiana.
Appreciate it can be eaten as a meal in itself but i want to serve it as a side. Usually I serve it it with chicken cooked simply with Mediterranean herbs. As this wasn't in our meal plan, we've already had chicken twice this week so don't want to have it again. But I can't get chicken out of my head so am hoping for suggestions for what else to to serve it with.

You could do some cod (or other fish) fillets. Drizzle with olive oil, salt, pepper and some fennel seeds or dried thyme and roast. Would be lovely with aubergine parmigiana.

I think it can be served with pretty much anything. Agree re the suggestion above of some fish. Aubergine and lamb is a classic combo so lamb chops would be great. But I think you could serve it with steak too.

The only thing I am not sure it would work with is another vegetable as a main. So no roasted cauliflower or stuffed mushrooms or whatever.

Lovely slow cooked leg of lamb with lots of garlic or roasted chunky cod fillets

Perfect, thank you. I'm usually pretty good at meal planning, just couldn't imagine anything better with it than chicken. Will see what the fishmonger has tomorrow and will go with cod, otherwise will go with lamb.

We eat it with Nigella's roast pepper potatoes & Waitrose Lamb Kleftico - together it feeds five of us - youngest 12 & oldest 86

Surely if you have already meal planned for this week and can't change- then you just need to fit it in with whatever you have already planned? What else are you having this week?

Just last week we had the very last of our home grown aubergine parmigiana. We have it mainly with chicken, but also lamb and pork chops. Could be served with any roast as a side too.

Could you use the aubergines to make melanzane? I often make this - a full meal/bake.
I slice and fry the aubergine. Make a tomato sauce - tinned tomatoes, salt, pepper, chilli and sugar. Make a béchamel - flour, butter, milk or cream and parmesan. Layer - the tomato sauce, aubergine, béchamel and pine nuts.

Am at the end of this week's meal plan, i want to have the aubergines tonight. We haven't had fish or lamb this week so as I said, will go with fish if i can get what I want, else lamb.

As per OP, I appreciate aubergine can be used to make the main, but I want to make parmigiana as a side (it's a family favourite we've not had for a while).
