My Airfryer Victoria Sponge

Obviously not a usual round cake but wanted to try a cake so...

Found a small oblong Pyrex dish that would fit.. mixed up a 2 egg sponge. 180 for 25 mins

Wouldn't usually make a sponge in a glass dish but it's all I had to fit. My plan was some jam and custard if it was a bit grim.

My best sponge ever!! Soft, light and delicious spread with jam and sprinkled with coconut.

I have eggs that need using up so I'll be making another

Oooh fab.

Ive seen a few air fryer cake recipe videos on YouTube, mostly American people, but I haven’t been brave enough to give it a go yet.
Dsis makes huge sponge cakes in the slow cooker which seems a bit weird somehow. I will definitely make an effort to do one in the air fryer now I know a regular person has made one successfully. Did you not take a photo as proof? Grin

Thank you for this!!!

Sadly my loaf tins are about a centimetre too long but i may look for smaller ones (or without the lip on each end) because that would be the best shape for my fryer.

I can see all sorts of mini tray bakes being made though like today.

You made a Lamington cake. Mmmmm.

Georgyporky · 20/10/2022 18:44

I've got a silicone pot
www.amazon.co.uk/gp/product/B082SRMT8K/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&th=1

It's got a ridged bottom, but there might be plain ones available that would be suitable for cakes.

Very interesting. So you put another dish with the sponge mixture into the ceramic dish of the slow cooker?

Air Fryer, not S.C.

Air Fryer, not S.C.

Oh yes! Well that makes much more sense.

wizzywig · 20/10/2022 21:34

Op, what size is your air fryer?

Sounds lovely, would you mind sharing the recipe please?

We have the same airfryer, I found some silicone loaf 'tins' in b&m that fit perfectly.

ShaunaTheSheep · 20/10/2022 21:57

Ooh interesting. For anyone with a round drawer, Aldi had ceramic baking dishes that fit, the other day.

Do you think a packet of brownie mix would work?

meateatingveggie · 20/10/2022 22:02

Just a normal sandwich mix

2 eggs
100g sugar, butter, flour and 1tsp baking powder.

I've just had another piece. I can't believe how nice it is 🤷‍♀️
