What rice shall I make to go with my mushroom and chickpea red wine dish?

Puff pastry gone off so no pie but still want to do the kind of red winey pie filling that will be mushrooms and chickpeas (vegan) and I could serve it with brown rice instead.

What type of brown rice would you make to accompany this? You know like if I was doing curry I'd do pilau, if I was doing Chinese I could maybe do some lemony rice.

But what type of rice shall I cook up for this pie filling meal I'm making? So it will be like a stroganoff/stew type of deal.

I think wild rice would go nicely.

I would do wild rice too. Cooked in vegetable stock with mixed herbs, you could stir some greens through it too like spinach or sliced green beans?

Yes thank you. I won't be going to the shops but will do that with the brown rice :) I have a bag of spinach and didn't think about the broth. My brain's not working today.

Yes gladly, and I'll be putting it in my ebook that I'm creating which I think I'll come and share here too as so many have said it's a good idea.

I put a sliced onion, garlic, in a pan and added a glass of red wine.
I added cooked chickpeas once they were reduced and then seasonings, I used paprika, cumin, salt pepper, and chicken seasoning.

I'm thinking to add celery or courgette in a bit, then add cream which I've made blending cashew nuts with water and onion powder. I use nutribullet for this but will have to advise a cheaper one in the book but it makes great sauces and shakes.

I'll pour the cream in later. I attach a couple of pictures.

I've just added some beef stock to the chickpea thing and that's being absorbed and later I'll be adding in the cream and more stock to the consistency I want to fall over the rice. It was a vegan beef stock.
