Gosh there's a lot of suggestions I'd not make the day before then serve room temps. Rice salad for example is notorious for nasties. When you say room temp how long will stuff be out of the fridge? Pies and quiches I'd be ok with. Chicken salad less so

I would not put anything out after it had been kept at room temperature.
Cold food needs to stored cold, maybe serve at room temperature but you can’t keep it out of the fridge for more than 2hours at most.

Maybe I'm wrong but I didn't read ops post as what dish can be kept at room temperature but as what can be prepped the night before put in a fridge until needed and the served without the need to reheat. I would question whether things such as bruschetta as suggested would be really soggy if served that far in advance.
Quiche, fritata would be fine.
I'd be looking for things that don't dry out and won't go soggy. A platter of sliced cold meat, coronation chicken, marinated, cooked then sliced chicken breasts, A side of salmon etc

Yes can be stored in fridge overnight but will then be out for about three hours and can’t be reheated
