Leftover roast chicken and veg - soup?

Right, I know Mumsnet loves to make a roast chicken last a week so hopefully you can help.

I have a large chicken leg and a large chicken breast, the equivalent to about 1.5 large parsnips (these two things already cooked), then some raw carrots, potatoes, onion, garlic.

I have the ninja soup maker blender smoothie maker thingy.

Do you think I could chuck this all in (maybe cook the potatoes and carrots first??) with 1 litre chicken stock and make a chunky soup?

I really really don't like next day roast dinner leftovers so trying to get creative!

You could. Personally I think it sounds like curry, or perhaps a pie.

I think I would rather eat the chicken as is, either hot or cold, but I love chicken. Make soup with the parsnips and a stock cube, or partially cook them and freeze till you have more veg, eg carrots to go with them.

That all sounds more like a pie than soup to me. Have you got any left over gravy to go in the pie? If not, make some white sauce.
Risotto works well with leftover chicken, especially with mushrooms & peas, but not so much with parsnips.

I find parsnips overwhelming I do a parsnip soup and use the chicken in a risotto

Pie is a great way to use roast. I’m lazy so I just have frozen pastry in the freezer and cut up the veg and chicken into the pie dish pour gravy over the top and slap pastry on top. It sits in the fridge like a free meal😆

I like dicing the chicken then austeeing onions, adding small diced roast carrots and some peas then making a creamy sauce, mixing it all together, then making savoury crepes and having savoury chicken crepes. Served with broccoli (some) and white wine (alot).

Chicken and mushroom pie
Buy a packet of puff pastry. Chop the leftover chicken and veg into bite size pieces. Season with salt and pepper.
Make a mushroom sauce. I use chicken stock that I froze from the last chicken bones but you could use a stock cube. Add a dash of Worcester sauce and a dash of HP sauce.Stir until the mushrooms are cooked. Set aside and leave to cool.
About 45 minutes before eating, put the chicken and veg into a pie dish. Pour over the mushroom sauce.
Coat the sides of the pie dish with beaten egg. Roll out the pastry and cover. Put three slits in the pastry, brush all over with beaten egg. Bake for approximately 25 minutes.
