the fat will have to be removed first I should think.
whole grain mustard, apples, onion that kind of thing would probably be quite nice cooked with a very small amount of water
cider is another good one for pork isn't it?Pork might be the kind of joint that cooks better if you chop it up a bit for more even cooking.If it's a large joint the edges might become tough whilst the middle is still undercooked iykwim
