Hi ... I cooked this on holiday and foolishly didn't copy the recipe.

It is SO GOOD. And healthy. And easy.

I'm longing to cook it again but can't find it online. Most I can remember - layering the cooked aubergine slices between her special tomato sauce and then there was a magic feta/egg combination on the top.

Any chance someone might DM me (or share with everyone) the full recipe?

I'm afraid I don't have that book and the Claudia Roden book I do have (A New Book of Middle Eastern Food) doesn't seem to have it either. I hope you do find it as it sounds great! I love Claudia Roden's recipes and the way she writes about food.

So sorry, I just looked and I have "Simple Mediterranean Cookery". Similar name but not the one! And I've checked - there's plenty of aubergine recipes but none like the one you describe.

Unless I'm missing something (entirely possible), that EatYourBooks link just lists the ingredients, not even the quantities, let alone the method, so not much use. I must say, though, scrolling through the list of recipes I'm strongly inclined to buy one of the secondhand copies. It all looks gorgeous.

Plum, ripe, peeled tomatoes... did you blanche yours OP or did you use canned peeled tomatoes?
The only way to peel a tomato is to put it in boiling water. Or have I missed a trick / hack here? How do you peel an uncooked tomato ?

Thank you, @CrimsonAlligator, that does indeed look good. I assumed it would be on those lines but it's good to have the right quantities and method. @loveyouradvice, hope you see this!

@MrsTuxedo, if I used fresh tomatoes I'd do that boiling water method, but I'm afraid I would almost certainly just use tinned. Cheaper, easier, quicker and in my opinion at least as flavoursome as fresh tomatoes, given I wouldn't be nipping out to the garden to pick some, or to my local market for beautiful ripe tomatoes picked off the vine a few hours earlier. The very robust tomatoes grown to withstand being picked while unripe and then spending weeks in cold storage, container lorries, supermarket distribution centres etc are not the best for flavour or texture.

It's such a gorgeous recipe. When I last cooked it I was in the South of France so did have rather wonderful tomatoes - but also took the easy route of using one tin of chopped and then adding large unpeeled tomatoes, rough chopped - twas a good mix and much quicker.

I'd encourage anyone to try it - it's leapt straight into my top 10 favourites for regular family meals

I also simplified it by not salting the aubergines (modern ones seldom need it) and then just brushing the slices with olive oil and baking in oven at 200 or so for 20 mins or so, so light brown and soft inside - and of course much healthier.
