Healthy snacks

I need to loose weight, it’s gradually crept on over the last year 😥a combination of snacking and big portions.

I’m after ideas for healthy snacks that are more than just fruit/veg. Ideally easy to make/keep. Happy to bake (this is probably my downfall🤦‍♀️ Bonus points if slightly fussy primary school kids will also eat them.

Banana and chocolate cake 156 calories per portion. Makes 9.

Line a square cake tin with baking paper. Fan oven 160degrees

Melt 30g of butter in the microwave
Mash 300g of ripe bananas until fully mashed.
Add 1 medium egg and whisk together with a fork then add the melted butter and 2 tablespoons of milk and mix well.

then add the following dry ingredients and mix until it all looks like cake batter (adding a splash more milk if needed)
125g SR flour
1 teaspoon bicarbonate of soda
50g cocoa powder

take 25 g of chocolate (I use a little moser Roth dark chocolate bar from Aldi) and chop into chunks, mix half into the cake mix and then put the cake mix into the tin, spreading it until even. Sprinkle the remaining chocolate chips onto the top of the cake and bake at 160 for 20 mins.

After 20 mins remove from oven and lift the cake out of the tin using the baking paper placing the whole thing on a wire rack to cool. Once cooled completely I cut into 9 and, still on it’s paper, I slide it into a large freezer bag and store it in the fridge.

I often make a big fritata for lunches or snacking. I tend to keep mine to just eggs and veg but depending on the sort of plan your following you could include potatoes, meat (ham or bacon both work well) or cheese. Can be eaten hot or cold and is brilliant for using up odd bit of veg in the bottom of the fridge. The protein also makes it quite satisfying.

I also like to make a big batch of a kind of oven baked falafel. Basically make up little balls of mashed sweet potato or butternut squash with an equal amount of chickpeas (break them down a bit with a fork), then some finely chopped onion and crushed garlic, sweated off in a pan with a few herbs and spices. Mix it all together, divide into bite sized balls, then flatten slightly on a baking tray. Chill for 15mins egg wash and bake.

Baked chickpeas with flavouring of choice. They go crunchy and kind of nutty.

Hard boiled eggs.

Celery sticks filled with cream cheese.

Chopped chunks of chicken breast with some kind of flavouring.

Muller rice pudding heated in the microwave.

Overnight oats
A ramekin of muesli and yogurt
Cuppa porridge
A mug of soup
Half a pitta bread and humous
