Gluten free bread recipe help

Please could you all give me your best gluten free bread recipes?

From a FODMAP experiment it's looking like DH needs to go low/no wheat so we need to alter our bread making to incorporate this. By "bread making" I mean bunging ingredients into the bread maker and pressing start.

Our efforts so far have been OK but a bit tasteless and crumbly, and DH (who never complains about anything) is a bit sad about the whole thing.

The best ones I've found are by Becky Excell.

She also has a few books that are good and easy.

It seems to be an IBS thing for DH. He's been investigated for almost everything else under the sun and appears not to have any of the possible issues. He has to take Creon following a distal pancreatectomy some years ago, but pancreatic insufficiency seems to be the only problem he has. He's still waiting for bile acid malabsorption tests, but that's the last possibility. However, the FODMAP diet did seem to help. We re-introduced just wheat and the symptoms are back. ☹️

He's a great lover of breads and cakes and I really want this (probable) change not to be too hard for him. He's been through so much.

I would second Becky Excell. My DS is gluten free, coeliac test was negative but as soon as he has a crumb of gluten he has tummy ache and diahorrhea. And is a bit 'off" and pale for a few days afterwards.
Becky has allowed us to bake proper treats not just give him "worthy" snacks! Haven't had a dud recipe and would eat everything in her books, which you can't say for most cookbooks.

Has he tried sourdough? The natural yeasts in the starter break down the fructans so it's more acceptable to people with IBS. Sourdough spelt would be the lowest FODMAP, then sourdough wheat.

I honestly wouldn't bother with gf bread if he has previously been a bread lover. I've been gf for 25 years now, and there is one bread (the Warburtons gf tiger bloomer) that makes a reasonable toast, but it is nothing like real bread.
Cakes otoh are great, you can't tell the difference, but you just can't replace the moisture and bounce of gluten for bread

Just bear in mind that lots of commercially available 'sourdough' isn't proper sourdough and still has yeast.
We use a rye starter and bake in a baking cloche in the oven (a Pyrex dish with a lid or casserole pot also works) - way tastier than a bread maker. This method garturstitchfarm.com/blog/kats-basic-sourdough?format=amp

Agree with @CMOTDibbler GF bread shouldn't be called bread. Crackers are much better.

If it were me, I would have a few days off gluten until symptoms calm down then try 100% spelt sourdough, then wheat sourdough.

If he hasn't been tested for coeliac yet, do NOT cut out gluten until he has.

He needs to be eating gluten to get a clear result to both blood works and colonoscopy.

He has been tested for coeliac's. I already said so. 🤷🏻‍♀️

I made the Becky Excell loaf yesterday which was pretty reasonable. It makes good toast.
