Best veg for madras curry?

I am making a slow cooked veg curry tomorrow with a jar of madras sauce but can't decide which veg to use.

I see recipes with courgettes and aubergines which seems a bit weird to me. I'd probably do sweet potato and chickpeas usually but I'm over chickpeas this week.

Would potato, cauliflower and spinach go together?

Or carrot, sweet potato and cauliflower?

I also have pumpkins and squashes in the garden if needed.

Potato, cauliflower and spinach make a great curry but if in the slow cooker all day will probably disintegrate. For a slow cooker I would maybe use onion, carrot, baby corn then add small diced squash or mushroom for the last hour.
