I work until late evening so I have started having a few containers in the fridge I can help myself from quickly when I get home. But would like some suggestions for more ideas? I would batch cook but don’t always like having a full meal. Currently I have:

potato salad
quiche
feta salad
cous cous
Houmous
rotisserie chicken

Does it have to be things that are served cold? Because in our house, we call this "foraging" and it's something DH does a lot of if I'm not there. We have things like:

Couscous (dry - boiled water to just cover and it's done in 5 minutes)
Bags of vegetables that can be pricked and microwaved
Avocados
Eggs (DH usually boils or fries them)
Olives and pickles
Cheese
Ham

Now that we have an air fryer, things in the freezer that can be thrown in the basket and cooked in 10-15 minutes include:
Fries
Crumbed chicken (we currently have nuggets or chicken kievs)
Fishcakes

Those Packets of tortellini are great for this.
Frankferters.mix with a dolmio jar and pasta for a cracking meal
Jar of pesto
Rice pouches
Chopped veggies in tupperwarecfor quick bowl of stir fry.
Tupperware of roast3d veg
Carton of custard because some night a bowl of warm custard over digestive is all u need.
Wholegrain pouches pearl barley featured ones are the best
A good Greek salad
A kachumba type salad
Jar of pancake batter for sweet or savoury crepes.(ham and fried egg or ham and cheese is the best ala French holidays😘)
Ready to roll pastry.quick pasty,pie,pinwheel,pizza slice

Tapas. Cheeses and charcuterie selection, stuffed sweet peppers, calamari, Spanish omelette, garlic mushrooms, etc.

you could then think of other similar themes.

Indian - tandoori chicken, paneer, rice salad, mini naans, cucumber/tomato/onion salad, chutney/pickles, bhajis or samosas, etc.

mexican - beans, Mexican style rice, sour cream/salsa/guacamole/jalapeños, cheese, pulled pork or a pot of chilli maybe, some veg - peppers and corn would work and wraps for tacos/burritos/nachos

Cut - up carrot sticks, celery and pepper strips, they're easy to eat with a dip or just when you feel like, 'oh I haven't had very many veggies today...' and then you can throw them on the side of anything

I love eating like this - I do it a lot if I'm going to be home all week. I am for two protein, two carb and two veg choices so my fridge might have:

  • homemade chicken kebabs (satay/sweet chilli/honey and mustard/garlic yogurt)
  • grilled halloumi (to be reheated)
  • roasted new potatoes (can be eaten hot or cold)
  • sesame noodles (can be eaten hot or cold)
  • chopped shirazi salad
  • roasted vegetables (to be heated)

I think if you do two of every food group plus some extras like houmous etc you can make a lovely variety of plates.
