What's your favourite most filling vegetarian breakfast?

Mine is bloomer bread toasted with a thick layer of avocado, fake bacon then hash browns on top , delicious. Need some more ideas thou rather than just granola and yogurt or toast 🤔

I love the Parsi omelette with fire toast from Dishoom, would probably be fairly straight forward to recreate at home.

I love this too and have, indeed, made it at home (it’s in the Dishoom cookbook).

Shakshuka or menemen, Nigellas Mexican scrambled eggs, smoothies, overnight oats, warm boiled eggs mashed in a cup with lots of butter and pepper and some seeded toast, egg, avocado and tomato bagels.

But my all time fave is a sort of fry up with a combination of flat mushrooms, spinach, egg, halloumi, avocado, tomato, vegetarian haggis, potatoe scones, toast etc. Most days I just have a breakfast burrito though, I make them in batches and freeze them.

you can obviously swap out the cheeses to make it more veggie friendly if necessary (sorry I am an omnivore)

But most similar recipes with eggs are filling: such as omelettes and frittata.

Abd how about those massive field mushrooms fried gently with a shallot, garlic, and butter served on toast with lots of parsley on top?

Current fave is sourdough slices, toasted, spread with chunky peanut butter, sliced banana laid all over then drizzled with maple syrup. So filling and SO GOOD!

Or toasted sourdough slices covered with smooshed avocado and fried mushrooms.

Or bircher muesli made with plenty of oats, seeds and fruit (I like to make a berry compote).

Toasted crusty bread/sourdough spread generously with hummus, add some rocket, then warm falafels on top. Delicious.

I meant to say that I just use the egg muffin recipe as a guide and although they are a bit of a faff to do correctly, at the same time, you can prepare the main part of the recipe in advance which makes them v convenient for family breakfasts.

So I tend to prep the veg first by gently frying Mediterranean veg in olive oil and some garlic: onions, red peppers , thinly sliced fennel etc etc until very soft and flavourful. You can add mushrooms, broccoli florets, whatever you like really. Half way through the cooking I add a tiny pinch of sugar and salt.
I cook quite a large quantity which I cool and keep in fridge for about 3 days.

Then when you are ready to cook the muffins in the morning you can (having chopped veg to appropriate smaller size - I use kitchen scissors) just whack the veg into the egg (and Parmesan) mixture and in to oiled silicone moulds or lined muffin tins. I sprinkle Parmesan on top too but you can get veggie cheese equivs I imagine?

They are really delicious warm and don’t go rubbery in the fridge so you can eat them cold for lunch too with a salad.

Breakfast burrito bowl with black beans, tomatoes ,Frank's, chopped veggie sausage, cilantro. I can never eat more than half. Or you can make an egg wrap to reduce carbs but I always forget.

Oooh all of these sound lovely , thanks everyone going to definitely try something new . I think a nice big breakfast stops me snacking at 11 which can only be a good thing 😀

American style banana pancakes with oats in the mix
French toast with cinnamon and berries
Baked beans Indian/Tuscan style (with spices, onions, tomatoes)

I do love acocado on toast with lots of lime juice, lots of schichimi togarashi (hot Japanese 7 spice) and scrambled eggs on top.

A close second is broccoli toast from Anna Jones amp.theguardian.com/lifeandstyle/2018/may/07/anna-jones-toast-topping-brunch-recipes

Scrambled tofu or microwaved sweet potato with lime/lemon juice and chilli flakes or jerk spice is good too.

Basically I like anything on toast 😂

Vogel seeded toast and cinnamon almond butter.

I'd happily eat nothing else for the rest of my life.
