Sauce with roast chicken?

Hi. Meal plan tomorrow is roast chicken, baby potatos and greens. I don't fancy gravy. Any ideas on what I could have to make it less dry?

Bread, cranberry, apple.

Mary Berry does an amazing mustard cream sauce for chicken.

Or how about a Marsala (sherry type drink) cream and mushroom sauce?

Or tarragon with mushroom and lime?

Tarragon with crème Fraich mushrooms and lime! Nigel Salter I think.

Garlic or chipotle mayo!

Salsa verde! We're making an amazing one right one with wild garlic, parsley, capers, lemon and olive oil. Yum.

Came to say chipotle mayo too - just add a bit of chipotle to mayo, it's lovely

I make a thinnish gravy but add lemon, makes it fresher,really nice.

This is genius
