Can I Batch cook roast veg?

Does anyone do this and keep the already
Roasted veg in the fridge for a week? I love roasted veg but the faff to cut it all up every night and wait ages to roast is too much faff, as I work full time and am a single mum! If anyone has any suggestions/recipes please let me know! X

Yes. Once you've got the chopping board out why not do a job lot, roll it in oil and herbs, zip loc bag, fridge. Or roast it all at once then chill and freeze in portions.

Oh fab @33goingon64 what veg would you recommend? I've got onions, peppers (no courgettes in aldi annoyingly) baby tomatoes!

I normally do onions, peppers, courgettes, sweet potato, squash, sometimes tomatoes or broccoli. Anything really.

I use them for all meals, I put them in a pan in a circle and crack an egg in the middle for breakfast, I put them in lunches or have them as a side for dinner. Sometimes add them to pesto pasta with some baked chicken thigh fillets that I prep for the week too.

We have a huge oven so to save putting it on each day we roast a huge amount of veg and chicken on a Sunday and then eat it over the course of the week, sometimes just warming it up and sometimes adding to other dishes (it's nice with couscous etc). Our baby does have roast veg a lot but he'll have it with hummous or I'll spread the veg on toast for him for lunch.

If you are really lazy, you can get frozen roast veg at Waitrose and just tip them out of the packet.

I do. I’m on my own, I roast a huge tray, then portion it and freeze it.
When I need it, I defrost it in the fridge, then mix it with pasta, or add more spices or harissa and have it with couscous.

So many great ideas! Thank you so much! Also, Waitrose frozen roast veg sounds very appealing for this lazy mummy! About to batch cook toddler cottage pie... wish me luck... then I'll do the roasted veg
