I have been given a bag of 6 red peppers and I am looking for some recipe ideas please.

I already have a recipe for tomato and red pepper soup, and we use them in stir-fry’s so I was looking for something else to try.

Agree with Bilbo, great recipe. I also love Rukmini Iyer's pepper stuffed with feta, artichoke and pine nuts.

I roast them with some oil in a baking tray till they’re soft and then stuff with roast veg couscous (you can buy those little packets you just make up with water, use more water than you usually would and add some extra garlic and tomato purée) and then bung some cheese on top and bake until the cheese is melted. Absolutely delicious.

Keith Floyd's recipe for Spanish Rabbit and red pepper stew is lovely, and you can use chicken if there is no rabbit available.

Piperade is usually made with green peppers, but works just as well with red peppers.

Caponata and ratatouille are easy to make and versatile dishes.

I made this Ixta Belfrage recipe earlier this week, which is a veganised version of a Mezcla one if you have that cookbook (and If you make the Mezcla version, I'd pinch the salsa verde from here to accompany). I’m not sure coconut milk was the right ingredient for the sauce; the Mezcla recipe had double cream which I preferred. Still a great recipe. Feels a bit fancy, but not too much effort as everything goes in a blender.

Roasted red peppers with garlic and red onion and sweet potato and carrots is a fab dish.could eat bowls of the stuff.

Stuffed red peppers with either a mince combo of rice stuffing.
Really good in veggie lasagne

Hold 3-4 red peppers over gas burner to roast. Place roasted peppers in a brown paper bag to cool. Peel off burnt skin.

Chop, then sweat red peppers with two big diced onions and lots of cloves of garlic in oil until all veg are soft. Add S&P and fresh basil.

Whiz in a blender until thoroughly blended. Add a little chicken stock.

Cook pasta until al dente. Toss in red pepper and onion sauce, serve with grated parmesan.

Also I'd just have the peppers before the blending in a big bowl!
Would be great in a traybake with chicken thighs and chorizo too which we've done.

I know it’s a bit late, but Genaro contaldos favourite pasta, spaghetti with Parma ham and red pepper is delicious, one me and dh enjoy on an at home date night.
