I remember vaguely a dessert from the late 80s which consisted of vanilla ice cream, served with tinned peaches and heated up strawberry jam. I think it was called peach melba.
Anyone else remember this?
Looking a veeery easy dessert for Sunday post-roast and thought it might fit the bill.

It is a travesty of the real peach melba which is made with fresh peaches and raspberry puree. This recipe is pretty close to the original

Peach Melba is raspberry jam/coulis! But yes, good quality vanilla, some raspberry purée, and grilled fresh peaches if you want to be posh, tinned if you are t bothered! Should be half peaches, so the icecream sits in the pit!

This has triggered a Peach Melba flavoured sweet or something I used to eat as a child and now it’s really bugging me as to what it was!

I’m trying to keep costs down so tinned peaches it is!
I have some flaked almonds in the cupboard....maybe I could toast some and sprinkle on top?

Or...

Fill the bottom of a serving bowl with a soft fruits (I use raspberries) then top with a mixture of equal parts whipped cream and Greek yoghurt and then top with dark brown sugar.

Peach halves sprinkled with ginger biscuits, warmed under the grill. Someone served this to me once and it was surprisingly tasty!
