Leftover Sour Cream

I will be baking a cake this weekend which will result in leftover sour cream, around two thirds or three quarters of a tub. Any recommendations on how to use it up? Or can it be frozen successfully?

Stir it into soup to make it creamy.

Can stir into a curry too.

Use it as a dip for nachos?

Pasta sauce - chicken, mushrooms, onion, sun dried tomatoes, garlic, oregano and tarragon is great in sour cream (obviously salt and pepper too)

I made pancakes a few years ago with sour cream. It's too long ago for meta remember the recipe, but they were good (and probably would be forgiving of defrosted sour cream if you go down that route).

Ended up with this stroganoff recipe. Still a little left, so will freeze and probably use in baking or something like pancakes.
