Storing fresh meat

I bought some lamb shoulder ( diced) from the butcher’s yesterday, intending to use it straight away, but now I’m going to make my slow cooker dish on Wed instead. The label says to use by that date. Should I store the meat out of the plastic bag? Last time I bought beef & left it secured in the bag & it was a bit whiffy when I came to use it.

Unless it's in a sealed protective atmosphere, I would freeze it until Tuesday night , then thaw it in the fridge overnight. If just placed in a poly bag and labelled by the butcher, it would probably be sour by Wednesday.
