Chicken mince?

What are you best recipes with it that don't use a million ingredients? I can cook but I'm more of a cottage pie/lasagne/stew than owt fancy Grin
My recently retired bored dad turned up with a bag of food shopping and presented 2 trays of chicken mince, like some Tesco version of ready steady cook

Help me use it up! The rest of the food shopping is easy to use but doesn't assist in the recipe so I can shop tomorrow for ingredients if anyone has suggestions

I use it in Thai style recipes or I make Burgers with it.
We don’t eat beef mince at all

This recipe www.sainsburysmagazine.co.uk/recipes/mains/sticky-hoisin-turkey-meatball-wraps uses bought turkey meatballs, but I make my own with turkey mince, and chicken would do as well. I don’t make fancy meatballs, just shape the mince … there are quite a few ingredients here but tbh the hoisin sauce and sesame seeds are what make it.

I buy turkey mince - same sort of thing - and make a meatloaf. Fry a leek or onion, add to bowl and mix with egg, breadcrumbs, mince, seasoning etc
I then line a tin with bacon or Parma ham and bake for 45 mins 😋

I made tacos and chicken lasagne as that's all I had in.

I was really put off as the texture seemed odd to me. It tasted lovely just a bit sticky/gluey when cooking. It would probably make great burgers/meatballs

Basic chicken meatballs tossed together with salted butter, dried tomatoes, spinach and penne pasta. Yum!

I make a really easy cheat version of meatloaf using turkey mince so assume it would be similar. I prepare sage and onion packet stuffing according to the directions, add a grated onion, add the mince and chopped dried apricots then cook in the oven as you would a normal meatloaf (I use a sort of bain marie type arrangement so it keeps it moiost) then eat hot or cold. I like it cold served with apple sauce from a jar on the side or in sandwiches with lettuce.
