Chicken broth/casserole using chicken breast

The whole household are poorly at the moment with various ailments Sad so I am going to try the traditional chicken broth treatment. I have 3 chicken breasts defrosting in the fridge that need using up, but all the casserole recipes I can find all use chicken thighs. Is there nice non-spicy recipe I am missing somewhere that makes a delicious casserole with breast? I am wary of just swapping the meat over as I don't want it to be too dry (fussy eaters)

Can you get ingredients in, or does it need to just be what you have in, if you're all ill?

In my experience breasts go very dry in a casserole or soup. They won't get you the deep flavour you want.

You could try poaching them and using Asian flavours like soy and ginger with some noodles and greens? Just google and see what you find.

Go for a thin, quicker soup rather than a slow cooked casserole ? Chicken noodle soup, with bits of spaghetti?

You could poach the chicken in stock, then remove it and cook the veg. Shred the chicken and add it back to the soup/casserole just before serving. Otherwise you risk it being dry and disappointing.

This looks just what we all need thank you! I will need to pop to the shop for a couple of things, but the corner shop should be doable.

As an aside, how would I poach the chicken please before adding it at the end? Just for future reference Flowers
