I do emkama's method basically but I do use cream, I whisk it up with the eggs (make sure it's double). I also sometimes add mushrooms (if I have them)

Chop up the bacon, put it in a pan with a little bit of oil if it needs it and fry it very gently. Beat up some eggs with the creme fraiche and the cream. Cook the pasta, drain it, put it back in the pan over a very low heat. Stir in the bacon and the egg/creme fraiche mixture and stir until the eggs start to set. Take off the heat, and serve with about a ton of grated parmesan if you've invited my dcs!

I do seeker's method but I mix in the parmesan with the cream and creme fraiche.

I hate to hijack, not to mention hating being stupid.... But, what kind of quantities are we talking about here? Ds just loves this with spaghetti, but it takes SO long to eat! Please help us!

seeker · 24/01/2008 22:02

I practically never give my dcs spaghetti - even though they beg - because it takes so long, and in ds's case, makes so much mess. I usually use pasta twists(because they stay on the fork). If you cook enough pasta for 4 people, I reckon you would need 4-6 rashers of bacon, 3 eggs and a good glug of cream or creme fraiche (this last is optional, bt I think it makes it nicer)

If you're making it for older children or adults, it's really delicious (if inauthentic) with a finely chopped red chilli in it.

theyoungvisiter · 24/01/2008 22:14

My quantities for 2 hungry adults:

1 small packet of pancetta cubes (about 80g)
2 egg yolks
2 or 3 tblsp double cream
2 or 3 tblsp grated parmesan
200g pasta
an optional 100g sliced mushrooms (fry with the pancetta)

Thank you ladies! Will try this for sure and let you know how it goes down. DS loves pasta in any form, but trying to teach him how to wind spaghetti at almost 3, not unreasonable, I know, but challenging!
Thank you

My quanties are
25g parmesan
75ml Double Cream
75ml creme fraiche
1 egg
100g of pancetta or bacon
