Bramble and apple vodka

A few weeks ago I made several litres of bramble and apple vodka, basically half a bottle of mixed brambles and apples, sugar added then topped up with vodka, left in a dark cupboard for about 3 weeks.

Today I strained off the vodka (totally delish by the way) and have a bowl full of vodkay apply brambly mush. Any ideas what I could do with it? I am planning some on icecream tonight, have thought it might go in christmas pud as part of the fruit element? Any more ideas? Seems SUCH a shame to bin it.

When I made raspberry vodka, I used the raspberries in a trifle, which could work for your fruit. Or maybe a middle layer of an autumnal pavlova?

I have a jam jar of brambles buried at the back of the fridge, from bramble vodka I made 10y ago. Every so often I remember it's there, and we have some as a 'grown up' ice cream topping. Verrrry nice!

Sounds excellent thank you. I have thought of making a purée and using it in a kind of Eton mess concoction. Or making ice cream out of it. I do have a LOT.

Or make it into a Snow. I've never made an alcoholic Apple Snow, but I don't think alcohol affects meringue, and I'm sure it doesn't affect whipped cream. Whip egg whites with lemon and sugar until stiff, then fold into the purée. Whip cream and fold that in as well. Then either eat as is, or bake briefly in a hot oven to give a meringue crust. If eaten uncooked, you can increase the proportion of cream. If baked, increase the proportion of meringue.

The alcohol will evaporate if you boil it into jam now.

But with all that sugar and vodka it will keep pretty well in the fridge until you can think of something to do with it.

Hmm. Snow sounds worth a try. It’s in the back of the fridge now contemplating it’s future. Tried some with ice cream the other day and the apples were quite sour, so they need a little something.

the vodka though is lush!
