The Quick Roasting Tin, Rukmini Iyer - recommends?

hello

Did a quick search, couldn't see any other threads on this.

Anyone got any favourite recipes they could recommend from this?

I've just tried the Cauliflower Cheese (with creme fraiche, mustard and kale) and I did improvise with adding some broccoli as well, but it was a overall bit eggy and a bit bland. Maybe I need some sharper cheese.

TIA.

Tandoori salmon is our favourite. Sometimes do it with roasted cauliflower instead of sweet potato.

ooh, I'll bookmark that, I've got everything bar the salmon :-)

I have The green roasting tin and it's my most used cookery book, I'm a pretty lazy cook and this gives good results with not so much effort

I really like the lamb meatballs on roasted cauliflour with pomegranate seeds.

I've just made the salmon with green veg, soy, ginger, peanuts etc, and it's quite nice, but leftovers don't keep all that well for one person. I think it's the one that might be on the cover photo.

I do like the book but I'm trying to reduce carbs and so many of the quick ones rely on pasta, rice, bulgar wheat, potatoes, noodles, bread chunks etc as the base of the dishes, so I find that there aren't as many to use as I thought there might be (I will try to learn how to adapt them but I don't always know about the cooking times or what else to use, as I'm a bit of a novice cook).

I wonder if any of the other books that aren't quick are better in this sense? I'm not big on lentils or anything, so I tend to avoid veggie books as there are usually a lot with those, but this might be different. Or the yellow one perhaps, or the round the world one.
