What to do with pork mince

I managed to get a couple of packs of pork mince with 75% off at Aldi. It’s not something I normally buy, but they were a bargain, so picked them up for the freezer, but I don’t know what to do with them. I could substitute it for beef and do a lasagne, bolognaise or cottage pie type thing but I wondered if anyone had a recipe for something different that might be good to try?

This same recipe is a favourite in our house too! Love it.
One thing to look out for is the fat content of the pork. Some packs are 15%, some 5%. The 5% can make this dish dry and you might need to add more oil.

Before DC turned veggie I used to make pork mince patties with grated apple, red onion, fresh fennel, brown breadcrumbs and egg. Grill them or bake them (turn them once. Make sure they are well cooked on one side so they hold together.) They are good in a ciabatta roll as a burger or with sweet potato fries and salad or with rice and spicy tomato sauce.

Pork meatballs with finely chopped shallots, dried apricots and chopped walnuts and fresh sage are lovely too. Bind together with egg and if it's too gloopy add some toasted brown nreadcrumbs

Or pork meatballs with smoky paprika and chopped red pepper and onion. Add egg and breadcrumbs as above.

I buy pork mince and do 50/50 with beef mince for my lasagna and Bolognese (I add a pack of pancetta too). I sometimes do Italian or Swedish meatballs with the same 50/50 split.

Or I go oriental, pork and prawn balls, wontons, toast or fried rice, Vietnamese pork, ramen, or Dan Dan noodles/rice. Pork mince is really versatile.

We have “boar burgers”. Use tarragon as the main herb and char grill on a heavy griddle pan. Much tastier than beef burgers.
Also meatloaf. There’s a recipe for one with a sticky gooey outside that was amazing. You slice it up and it’s a bastard cross between pork pie and burger.
Use it for stuffing balls with stale breadcrumbs.

I fry it off with garlic as it cooks to the point if being tender so quickly and it does work well in pasta dishes. It's also delicious added to stir fries, Thai style curries and so on.

I make a fajita pie/Mexican lasagne with it
Make a Mexican spiced minced pork with t toms etc
Layer with tortillas and crème fraiche (add chipotle paste to this sometimes). Grated cheese on top and bake it for a bit until this melted

I make burgers with mine . 750g beef steak mince to 500g pork mince makes a really juicy burger. Freeze we’ll just put a little grease proof paper between patties.

Again similar to some above but delicious and surprisingly filling!!

Pork Mince Lettuce Cups

Thinly slice an onion and grate a carrot - marinade in white wine vinegar, some sugar/sweetener and a pinch of salt while you do the rest.

Chop half a red pepper, some spring onions, a fresh chilli cucumber and a few roasted salted peanuts into small pieces.

Fry pork mince with some garlic and ginger until no pink bits remain (about 6 mins) sprinkle in some 5spice, soy sauce, rice wine vinegar and/or fish sauce and cook for a minute more.

Serve in little gem lettuce leaves with the (drained) carrot and onion and all the other bits on top with a drizzle of hoisin sauce
