Cooking chickens ahead of Sunday dinner?

I'm making a roast today and in practical terms I'd ideally like to get the chickens cooked by 3.30 in case we pop out for a drink first. We will be eating for 5.30. I think if I cover them with foil once cooked they will retain some heat - or is that a recipe for food poisoning? Thanks in advance

As an update, it seemed keeping a cooked chicken out and warm for 2 hours wasn't ideal so I ended up cooking an hour before needed and covering with foil. It was still too hot to carve at that point!
