Could you share with me your favourite recipes?

Currently debating whether to go for enchiladas, or build your own fajitas.

Would love interesting ideas of sides to jazz it up (preferably without beans)

Sopa de Lima as a starter. Definitely pica del gallo and some form of corn as side dishes. Not sure what I'd do as a main. One of the best meals I ate in the six months I lived in Mexico involved really thin steak, rice and corn with cilantro and lime.

Definitely need:

A huge amount of proper guacamole (for scooping up with tortilla chips, or to add to the main)

Brown rice or Mexican/Spanish rice

Refreshing cotija cheese (or crumbly feta alternatively)

Sautéed vegetables (bell peppers, onions etc)

I wouldn't do fajitas. They are messy to eat and involve a lot of passing dishes round at the table. Also it's difficult to get them exactly right as the cook and involve a lot of hands-on cooking when you'd probably prefer to be talking to your guests.

Make your own salsa with very finely chopped tomatoes, red onion, lime juice, salt and pepper and loads of fresh coriander. It can sit for a while as well so can be made early.

Esquites (delicious corn soup), coctel or perhaps queso fundido to start and then carnitas and some yucatecan chicken tacos and for vegetarians some courgette and sweetcorn tacos

I had one not that long ago. People drank all the margaritas as opposed to the sangria.

Nobody touched the chicken tinga.
Birria and carnitas were the most successful.
Flan was a hit too.

Moderate success with beans/potatoes and chorizo.

Nopales was another big win!

I Would do fahitas! They’re a favourite in this house - the salsa @CoverYourselfInChocolateGlory suggested sounds delicious and I’ll be stealing that recipe thank you!!
guacamole, sour cream, huge pile of cheese and then you can do chicken and peppers and steak and onions for a couple of different fillings.
Nachos to start maybe?
I like the idea of passing round plates at an informal dinner party

Definitely cornbread! I like fajitas that everyone can do their own thing with, or a Mexican casserole like this with tortillas, bread, and all the trimmings.

Quesabirria. Mostly done in advance, fun to eat, indulgent, delicious. Loads of broth for dipping. Homemade nachos with excellent toppings, salsa style salads. Rice pudding ice cream with Dulce du Leche for pouring.

I love home made salsa - ripe toms finely chopped, spring onions, corriander dressed with lime juice and salt. I think most people would add finely chopped chillis but I love it without - it's really refreshing.
