Recipes for preserving potatoes

We have quite a lot of potatoes, from big King Edwards to little Charlottes. I’d like to try to cook some for freezing (or another way of preserving them). Does anybody have some tried and trusted recipes? Par-boiling for chips or roasted potatoes seems obvious but maybe there’s a way of jazzing them up a bit? What about gratins, do they freeze well?

Gratins and boulangere potatoes freeze well, as do rosti/latkes (grated potato pancakes). For roast potatoes, parboiling in the shape you want your roasties to be works well and you don't even have to defrost the potatoes - here's the method: www.sainsburysmagazine.co.uk/recipes/potatoes/extra-crunchy-freeze-ahead-roast-potatoes

Hundreds! Many still in the ground. Some great ideas here, thanks all. Sadly our leeks haven’t thrived in the hot summer though.
