Your best veggie slow cooker recipes please!

Because our oven requires a small mortgage to run.

I'm allergic to red, green and yellow peppers but eat everything apart from that.

I made this yesterday in the slow cooker, after seeing it recommended on here. It was delicious and made about 6 portions so having it again tonight with leftovers in the freezer for next week.

I do a veggie shepherds pie filling that we always enjoy. I suppose if you cooked the mash just before you wanted to eat you could just flash it under the grill, rather than putting it in the oven.

A chopped onion
2 sliced leeks
2 sliced carrots
couple of cloves garlic, crushed
pack of Quorn mince
glass of red wine
mug of boiling water
teaspoon of Marmite
half a teaspoon of dried thyme and/or a bit of chopped fresh parsley or a few mixed herbs
couple of spoons of Bits granules

Just shove it all in and leave it to it.

My problem is that so many recipes rely on tinned tomatoes or passata and I don't really enjoy them.

@livingonpurpose going to try this tonight, how long did you cook it for please? And did you just use the amount of liquid in the recipe?

@JorisBonson I cooked in on high for about 4.5 hours. I used half the liquid in the recipe and it was perfect. Enjoy - it was delicious!

How did you burn your aubergine? I don't have a gas hob and I'm not starting up the bbq! And then you remove the charred skin and just use the flesh?

@LaLaLouella I don't have a gas hob either and definitely wasn't going to fire up the bbq! I used a griddle pan on the hob to burn the aubergine and it worked a treat.

Sorry, yes, just peel off the skin, remove the stalk and chop up the flesh.

Not a recipe but this book - ‘Vegan Slow Cooker: Over 70 delicious recipes for stress-free meals‘

Its a thin little cheap book but all the recipes work and taste delicious. It’s £5 on Amazon, but I think I bought it in tkmaxx for less.

A couple of reliable recipes we've used for years. The shep pie has lots of ingredients but is worth it in my opinion. Nice and rich tasting and loads of meat eater friends have enjoyed it.

But that''s nothing like a Shepherds pie. Might still be nice, but tinned tomatoes and beans are not shepherds pie.

Lentils might make a nice base, but I'd cook them in red wine and some Bisto personally, not tinned tomatoes.

@BerthaBetty the recipe for the Cajun bean stew with cheddar corn dumplings is to do it in a pan and then finish in the oven - what do you with timings if you do it in a slow cooker? I wouldn't bother with the oven at all myself, dumplings are fine in a pan when we do them normally. Thanks.

I've printed that one, @Eyesopenwideawake 's chickpea curry, @Fivemoreminutes1 's Tuscan Bean Stew and bolognese.
