We will shortly have loads of butternut squash harvested from the garden. I love squash and would love some recipes if you have any!

I made up a lovely roast butternut squash lasagne. You roast the squash with diced onion, olive oil, cumin, cumin seeds, chilli flakes, salt and pepper. When soft and cooked you combine it with bechamel sauce, roasted pine nuts, spinach leaves and roasted pine nuts with layers of lasagne. If you like put mozzarella on top.

I've also used the same recipe roasted squash with feta and salad leaves with a sesame dressing.

And used squash in a Thai green fish curry.

Might work for squash instead of pumpkin. Cook, purée and add butter and dill.

I like to roast it in cubes and use it with green beans for a vegetarian korma curry.

the other one I love is gino d’campos squash risotto but I reduce the stock by 200ml and add 200ml white wine after the oil has been absorbed
