Just that really looking for something green and fresh to go with steak and chips that's a bit different to lettuce cucumber and tomatoes?.

Yep- has to be a rocket and tomato salad with balsamic and olive oil and Parmesan shavings (done with a veg peeler). Yum!

Came on to suggest watercress too. More nutritional value than lettuce.

Or use the peeler to do ribbons of raw courgette with oil and lemon juice. Lots of chopped mint and a sprinkle of dried chilli. Bit of ricotta or feta on top- also really good!

Creamed spinach! Not sure if it hits the ‘fresh’ box enough for you but for me it’s the perfect steak accompaniment

I sometimes cook green beans and then leave them to cool. I then put them in a container in the fridge with lemon juice, garlic , salt and pepper.

After a few hours it makes a good cold accompaniment to meat.

Watercress, sugar snap peas (blanched) and watercress, French dressing optional.

Picked this up from a Nigella salmon recipe years ago and it's one of my favourites, would go well with steak and chips.

I'd also like a tomato salad (chopped tomatoes, red pepper, light dressing)

Green beans, cooked, drained, French dressing and chopped garlic added while the beans are warm, then left to cook to room temperature.

Finely sliced cucumber with a teaspoon of white wine vinegar and chopped dill, left to marinade for a little while.

I think if you make a salad like one of the above, you can still serve it on a bed of lettuce, with cucumber or tomato if not in the tarted up salad.
