Big pot of...what?

Have 12 family members arriving for the weekend, but all are arriving at different times tonight between 5.30 and 8pm and some from the airport so may be delayed. I thought for dinner instead of making a meal for all, I would make a big pot of something that people could dip into whenever they arrive.

One veggie adult who isn't precious, no other restrictions, kids ages 10/10/8/4/2 and rest are adults that are not all that keen on too many carbs.

Have about 30 mins midday to throw something together and really blanking on what to make!!

Curry/chilli/bolognese?

Definitely chilli. Bags of tortilla chips, some wraps, maybe bake a few jacket spuds that can go in the microwave to reheat. Veggie person can have a jacket potato and cheese, or a quesadilla with some salsa.

Chilli with toppings-, soured cream, salsa, guacamole and coriander. Serve with rice, baguette or jacket potato halves.

Enjoy

If you want a vegetarian chilli recipe I can't recommend this one highly enough. It's a favour bomb, rich, and not lacking at all. I have often found veggie chillis insipid compared to meat versions, but not this one. Be warned on the number of chillis she uses though, it is pretty hot, so I would reduce that down unless you and your guests all have high tolerances.
