Has anyone a very quick way to make risotto without having to stand over it and stir? Can it be done in a slow cooker? I hate cooking 😁

This is a delia smith oven baked risotto. I imagine you could adapt it to any risotto.

I use TimeToIntefere's method myself.

You can do it oven-baked but it is not the same as risotto you have stirred for 20 minutes and beaten butter in to at the end.

For this reason I don't make risotto often and see it as something special not a quick weeknight meal.

I do it on the hob but I add a lot of liquid at the beginning. You do still need to give it a stir every 5 mins so it doesn’t stick to the bottom of the pan, but you definitely don’t need to stand there adding little ladles of stock and stirring continuously.

Oh my word why rush risotto, I find the whole process relaxing and eat it at least once a week, my favourite food! I do also utilise @TimeToInterfere method at times tho!

When time is short, I think this BBC recipe is a good base for oven baking. I use it as a base for different versions. Eg chorizo fried up with onion, then roast cubes of butternut squash while the risotto is in the oven. Mash half and stir into the finished risotto and scatter the rest on top. I love it with crumbled blue cheese on top.

But, when I have the time, stir with one hand and drink wine with the other!

Get everything to a boil on the hob then pop in an oven dish and oven cook it, I stir in some Parmesan 10 mins before I take it out (mushroom or asparagus risotto usually) and love how it melts in but also goes a bit crispy on top

There's a few oven baked risotto recipes on bbc good food. All delicious. I rarely make it the old way now that I've oven baked it.

Wow loads of ideas here. Not sure what an 'Instant Pot' is? Is that an American term for cooking equipment or something like a Pot Noodle?!

Instant pot is an electric pressure cooker. Well, multi cooker, but it's the pressure cooker function for risotto.

I make an oven biryani with curry spices, chicken and mushrooms. Just need to check and stir it half way through cooking time.
