Healthy cakes always crap

Every so often I'll stumble across a website with healthy muffin recipes or similar, with great review and waste time and cash on good ingredients that end up as something dreadful!

Just make some wholemeal no sugar carrot muffins with yoghurt and they are mush inside yet over cooked on the outside. Anyone else fall for these recipes?

My friend makes healthy cakes, and I don't have the heart to tell her they taste dull. She goes on at length about her toddler daughter not liking sweet things. Its no wonder if that's the only 'sweet' things she gets. Sorry to my friend, we really like you but your cake is crap!!

abovedecknotbelow · 29/08/2022 16:14

Cakes aren't meant to be healthy I'd rather have no cake than a whole meal sugar free carrot muffin!

LuciferRising · 29/08/2022 16:23

They were for DD lunchbox. But actually, that's a fail anyway because they have walnuts in them.

Syrupy flapjack next time.

Healthy muffins and such can be delicious. The problem is that there are so many bad recipes online and you have to be very familiar with each ingredient & quantity to know by looking at a recipe if it is any good or not. I don’t trust food reviews any more because quite often I see ridiculous recipes that can’t possibly come out nice with 5 star reviews.

I have made some truly awful healthy cakes and some that were ok. It was due to allergies and intolerances (medically diagnosed) in the family.

Luckily we're all able to eat more now. I try to just have smaller portions or not make a sandwich cake, or put vanilla yoghurt on with fruit rather than buttercream/cream/jam.

I don't add all the extras that seem to go in now, just try to keep them simple.

Cakes made without sugar are called scones.

Scones have sugar in them.

I have a great recipe for healthy breakfast muffins using grated carrots and apple, nuts and sultanas, obs flour and eggs as well. Since being diagnosed with T2 diabetes I have eaten them a lot and they are yummy! 😋

I hate be that person.buuut cakescan be perfectly within a healthy lifestyle.high calories foods aren't the devil. Sugar isn't bad for you.
Eat the cakes!
Plus once you allow the cakes your satiated.avpid or compensate or restrict them and u simply want them more and nothing hits the spot

Fluffruff · 02/09/2022 06:44

Try these they’re really yummy, I made a double batch and reduced the sugar from 200 to 160 but will reduce it even further next time as still sweet from the sultanas: www.dovesfarm.co.uk/recipes/sultana-muffins

Bestcatmum · 02/09/2022 06:47

Depends how desperate you are for cake. Really. I quite like a healthy cake. Unlike quinoa it's the vegetarian go to in fancy restaurants and nobody can make that stuff taste nice. Unless it's in a cake.

Have you a recipe?

CornedBeef451 · 02/09/2022 08:31

@ApolloandDaphne some scone recipes use sugar, others don't.

I don't like sweet scones so I use a recipe with no sugar and then add lots of jam and clotted cream.

MintJulia · 02/09/2022 08:52

My approach to this is use my dm's 1970s cook book. Cakes then had much less sugar but they weren't sugar-free. It's a reasonable compromise.

IpanemaChic · 02/09/2022 09:05

I made courgette chocolate muffins this week, with almond butter and small amount of sugar. I added 7 chocolate chips to each top so they looked more caloric than they actually were! Teens really liked them so I will add to my regular baking.
