Found some shortcrust pastry in my freezer - any recipe ideas?!?

Need some inspiration what to do with it... any ideas ladies??

I roll it out really thin, fold it over with some slices of emmenthal cheese inside and use it instead of potatoes on top of a fish pie or shepherds pie
