Rice flour in a sponge cake? (picked the wrong bag)

Arghhh. That’ll teach me, ages ago I’d swapped rice flour from its bag into a cardboard HomePride box.

Realised after cake was in the oven and I was clearing up.

it’s a lemon drizzle sponge cake for my friend’s birthday today, who is due here at 11am for a birthday lunch.

ditch it and make a Victoria sponge quick or will it be ok?

See how it turns out, if it's bad nip out znf buy a cake. Using alternative flours is often a challenge in great british bake off so should be possible.

Yes I’d seen that. Just wondering if anyone had any previous experiences of my blunder.

seems to be rising ok, I’m going to wait until it comes out of the oven and then decide.

Haven't used purely rice flour in a cake but it's not uncommon in gluten free cakes. You may find the texture a bit more solid than a standard sponge, and some gluten free flour feel a bit 'grittier'. However, if you're making lemon drizzle that should accommodate any issues. Perhaps put a bit of lemon zest into the drizzle, which will help balance things out.

I haveused rice flour as I bake only gluten free cakes, but I’ve not seen a recipe that has the same amount of rice flour to replace plain flour, it’s normally a rice flour and ground almonds ratio, so I’m not sure if the cake will turn out ok.

I stopped using it as I found it made the cakes taste very grainy, and just use gluten free flour instead.

I’d make the back up cake too just in case!

Well it’s out of the oven. Risen nicely. I cut a tiny bit out and taste tested, bit stodgy but drizzled lots of lemon drizzle over it. Fingers crossed I’m going to wing it, we’ll probably have a laugh and a kit Kat if it’s a failure 🤦‍♀️

Lemon drizzle is very forgiving due to how much moisture you then add, so you should be fine.
When replacing flours with Gluten Free alternatives like rice flour you'd normally need to add something additional like xantham gum to give you the crumbly texture - if done right you can't tell any difference.

It was fine. I wouldn’t do it again but it wasn’t awful.
