I do a mushroom and barley soup similar to this one. I add chopped precooked packed chestnuts for a quick extra touch of autumnal feeling, and finish it off with parmesan and good olive oil.

Butternut squash and sweet potato, flavoured with sage and parmesan is also simple, delicious and warming, perfect served with crusty bread and cheese.
I sometimes swap the sage and parmesan with my favourite mix of curry spices and use coconut milk alongside the stock, then serve it with naan bread.

I'm also a big fan of beans and grains soups too, very filling and nutritious, although you might argue they resemble a stew more than a soup. I just fry chopped onions and diced carrots with herbs like sage or rosemary, add a can of mixed beans/pulses, a bunch of barley or Italian spelt and enough vegetable stock to cover everything, then let it bubble away until the grains are cooked. You can add more cubed vegetables at the same time as the barley to suit your taste. Once plated, yet again, parmesan and olive oil.

Syrian lentil soup - the blended lentils give this soup and huge amount of body and creaminess.

Sweet potato and lime soup - the sweet potato and spices are perfect with the lime and feta.

Italian tomato and bean soup -- easy and quick. And delicious!
In a medium to large saucepan fry a chopped onion in a little olive oil until soft and translucent, add chopped garlic and a herb of your choice, sauté a few moments before adding a tin of chopped tomatoes and a tin of borlotti beans. Fill the tomato tin with water, swirl it around and pour into the pan too. Then add a chicken or vegetable 'stock pot' (condensed liquid stock) and simmer for 15 to 20 minutes. Add seasoning to taste.
You can blend the soup with a stick blender until smooth, or leave it slightly chunky or just mash it with a potato masher. If it's bit thick add more water. Give it a stir, bring it back to the boil and serve.
Optional extras -- a swirl of EV olive oil, grated parmesan, croutons, bread.

I like soups which don’t need blending. Favourites are Rose Elliot’s leek and potato plus black bean of my own invention.

I"ve never made leek and potato soup. I think I've been missing a trick.

Spinach and pea soup is my go to becuase it's so easy. Sweat chopped onions until translucent. Add peas and spinach - frozen is fine. Add just enough stock to cover (if using fresh spinach, add a little stock and wait until it's wilted before deciding how much stock to put in). Simmer for 10 minutes. Blend with some nutmeg and a generous squeeze of lemon juice and season to taste. Serve with a large dollop of greek yoghurt stirred in.

Leek and potato: saute seasoned leeks in butter, boil potatoes until cooked, combine, add water or stock and simmer. Blend. I like 3:1 leeks to potatoes, but half and half will do.
Red soup - onions, peppers and tomatoes About ⅓ onions and ⅔ of peppers and tomatoes depending on what you have. Saute or roast, add water or stock, simmer and blend.
Vegetable soup: saute chopped onion, carrot and celery. In another pan, boil and then simmer some diced potato and a couple of spoonfuls of barley. 10-15 mins and then boil and simmer in water or stock. Add frozen peas and a tablespoon or two of pesto just before serving.

Water will do if you have no stock or prefer not to use it, so long as you season well. These are my go-to soups. I do make others, but these three feature regularly.

Stem soup - use the stem of broccoli and cauliflower, and the leaves. It's like a free soup because most people throw the stems away.

Butternut squash garlic and sage.
Just roast diced BNS with some chopped onion, whole garlic cloves (squeeze out after) and some sage leaves.
Then whizz with some stock. Just delicious.
