I’d probably just search for vegan recipes, for ease of finding recipes without eggs, but then use dairy butter/milk rather than buying in vegan versions.

Empire biscuits. Delicious if very simple. Best iced with a jelly tot on the top (don't like cherries!)

She does do different instructions depending on the wattage of your microwave. Deliciously addictive. I use 10g less of both the caster sugar & brown sugar in the caramel though as I found it tooth achingly sweet but that might just be me. I reduced the butter (well, Lurpak spreadable) to 90g too.

I have been known to swap the raisins for finely chopped mars bars, jelly beans, smashed up crunchie bars and mini marshmallows when the office really needs cheering up.

I make a traybake by combining golden syrup with melted chocolate and butter, mixing in crushed digestives, glace cherries and mini marshmallows which melt in to the mixture, flatten on a tray a cool then drizzle white chocolate on the top

Mine would be Mars bar, or marshmallow crispie bars.
It that simple. Melt the chocolate or Marshmallows and add to the crispies. For added interest, add a layer of milk chocolate to the top of the Mars bar mix.
They go down a storm here.

Fifteens. Google the details but the general rule is 15 of each of the below. One 250g tin of condensed milk and then coconut to bind it all together and on the outside.
Crushed digestives, condensed milk, marshmallows, glacé cherries, coconut. In a bowl, mix, shape on to greaseproof paper like a log and then put in the fridge.
Delish.
Makes about 15 slices unless you are me and eat half the mixture as you go along.

Thanks for the recipes. Some great ideas, and I’m glad I asked the mn community as I’ve never heard of empire biscuits or fifteens. I think I’ll go with shortbread and tiffin this time round as I feel the recipient would appreciate something super traditional.

Millionaires shortbread is egg-free. It's a bit of a faff with the different layers but there's nothing better!

Also posting in the hope that someone else might have this long-lost recipe for a traybake that we used to make: it used crunchy nut cornflakes and was glazed with lemon juice + icing sugar. Can't remember the rest (butter, flour, sugar maybe?) but it was so moreish!

Rocky Road is very easy and quick (apart from the chilling time). As long as you make sure your marshmallows are egg free it will be fine.

Mocha Squares

Taste fab & only needs 2 saucepans & a tray bake tin. No eggs or dairy.

For the base
8 oz / 225g Pure Sunflower spread
8 oz / 225g granulated sugar
8 oz / 225g self-raising flour
5 oz / 140g porridge oats
2 oz / 55g cocoa powder

Preheat your oven to Gas Mark 4 / 170 oC / 350 oF

Grease & line 10 inch square / rectangular cake tin, preferably loose-bottomed.

Melt the spread in a medium saucepan.
Stir in other ingredients
Empty into the tin & smooth out.

Bake in centre oven for 15 minutes. Leave to cool in tin.
For the icing
2 oz / 55g Pure Sunflower spread
1 tablespoon of water
1 tablespoon of Camp coffee essence
8 oz / 225g sifted icing sugar

Melt marg with the water. Remove from heat.
Add essence and icing sugar. Stir well.

Pour over the cake and tip from side to side to cover.
Leave to set. Cut into squares

Becky Excell is gluten free but at the end of her recipes she usually has adaptions for many dietary needs eg egg free, dairy free, vegan.
