Corned beef casserole - another family favourite

Corned beef casserole.

Slice a tin of corned beef and layer it in a casserole with sliced potatoes and onions. Pour on stock or water and a bay leaf and maybe some herbs and bake in the oven. It sounds a bit strange but it is really nice.

Where are you from speckledhen? My DH is from Northumberland & he does this recipe every now and then because his mum, gran, auntie, etc all used to do it. It is really nice you´re right

I love corned beef. This sounds great . I like the basic version with just layers of potatoes and onions with stock as well, so this should really beef it up (no, no, stop, my sides will split ). Thanks.

Just wondered Speckledhen as I´m from the south & had never heard of it & thought it was mainly a northern dish

raw corned beef is totally different from this. it really changes in the dish honestly.
