I've got a breadmaker but whatever I try in it, the top half of the loaf is lovely but the bottom, especially around the paddle, is too thick and dense. I tried taking the paddle out after the 'knock back' part of the cycle but this affected the temp and the bread didn't rise. Any ideas?
Also, I'm really bored with the recipes from the breadmaker book. I got a book from M&S a couple of years ago but they are all too fussy.
I'm looking for interesting bread ideas, can be ones to finish off in the oven, white bread, bread rolls, fruit or nut breads, etc etc. The machine is going to start gathering dust if I don't get some inspiration!

Looking at booklet.

Make sure you add all the ingredients in the right order.
Make sure yeast is the right kins and fresh enough.

yes yes yes always put ingredients in the right order. Its my 2nd bread machine, the first one I literally wore out. That old one made fab bread. So its not like I don't know what I'm doing, but the recipes provided with this new machine (and any other recipes come to think of it) seem to leave me with this lumpy dense part at the bottom of the loaf.

Must be the machine then, try slightly varying the salt/ yeast ratio.

Do you mean less salt more yeast or the other way round? I use the dried yeast Fermipan that comes in a bag and lasts ages, perhaps near the bottom of the bag its past its best?
