Cooking curry for dairy, onion, garlic free Coeliac

Hi 👋
I'm planning an Asian food evening for 10 people, unfortunately one guest has been diagnosed with Coeliac disease, not only can he not have gluten but he can't eat onions, garlic or dairy. I'm stuck. Can anyone offer a cracking preferably meaty recipe please. There are plenty of things on my menu that he can have but I'm missing a main.

Don't have a recipe myself, but Jainism doesn't allow eating onions and garlic, so check out some of their recipes maybe? Googling 'Jain curry recipe' brings up quite a lot.

e.g. this recipe for 'gravy' (a curry sauce basically), to which you could add any protein you fancy.
