Our new oven has a 'Pizza setting' and makes pretty nice pizzas, using a bought base dough. However, the mozzarella goes very runny.

Is there a specific mozzarella I should be buying? I usually just get Sainsbo's own, but it makes a real mess.

Also, can you please tell me your favourite veggie toppings that don't use mozzarella and don't have a tomato base?

I usually use pesto or red pepper pesto, rather than a tomato sauce.

I'd be especially interested in ideas for a blue cheese pizza, maybe with walnuts? Any other delicious ideas? I'm not fussy about cheese, so feel free to tell me use Parmesan etc, although I do usually buy veggie-friendly ones.

Feta, broccoli and olives is my favourite pizza. I use standard mozzarella balls as it’s cheap. Tear it up and sandwich between two sheets kitchen roll and press down to get rid of excess moisture.

I make one with truffle pesto (Sacla brand, nothing fancy), which I mix with a bit of olive oil and spread onto the pizza base. Then I distribute half a burrata ball over the entire surface (seemingly very runny, but if you don't put too much it works out perfectly once it's cooked) and add sauted chestnut mushrooms. Once out of the oven, add parmesan shavings. It's delicious, not too heavy and feels like a treat.

Rocket is lovely on a pizza. I also do a big bag of frozen, chopped onion in the pressure cooker so it's lovely & caramelised. Drain really well to get all the moisture out and pat dry before adding to the pizza base. Jarred peppers are great too - or the little piquant ones.

I like to roast butternut squash and garlic, then blitz them to make a thick orange sauce to spread on the base.

With gorgonzola and rocket, lovely

I like mascarpone as a base instead of tomato. I usually chuck on some of the following in any order:

Stilton/Gorgonzola,
buttered leeks (lovely with sliced pear)
walnuts and drizzle of honey
mushrooms

Ooh now I'm realllly craving pizza!
