Aubergine in pasta

LadyEloise1 · 10/08/2022 18:12

I have a recipe for pasta with aubergine.
It doesn't say whether i have to take the skin off the aubergine. It just says cut it into 1cm cubes.
There is no photo accompanying the recipe.
Should I remove the aubergine skin ?

No. Leave the skin on.

I wouldn’t.

Is it spaghetti a la Norma?

Leave the skin on.

Whatever the recipe.

Leave the skin on. But then I'd either fry it hot in plenty of olive oil, or roast it (again plenty of oil). I hate soggy aubergine that's been boiled/sweated down in a sauce.

Great thank you.

My favourite aubergine pasta dish peels alternating strips off the aubergine (like a zebra) and then bakes it. But in the absence of other instructions I’d leave the skin on.
