Corned beef twice baked jacket potatoes

I thought I would make this for tea tonight, used to have it as a child and loved it.

my mum used to just scoop out the potato, mash corned beef in and put back in oven for 15 minutes.

I want something a bit more fancy 😊. I am serving with salad and coleslaw. I have corned beef, a range of onions, cream cheese, hard cheese etc.

what do you suggest? I want the kids to love it, youngest two are eleven now so are open to trying new flavours, but still a bit hesitant about onion.

all ideas greatly appreciated

Don’t get too pissed off if they hate it! Grate the onion or leave it out

I'd probably slowly caramelise red onions in a pan until nice and sticky than mix with the potato. Add an egg yolk to the potato mix to make the top crisp up even more.

I ended up doing cream cheese, caramelised red onion and corned beef, topped with grated cheddar. Was really lovely , kids loved it too!!! 😁

I add sweetcorn to mine if I mash corned beef into a jacket potato, then top with cheese and grill until bubbly

OMG, I think if I made this for my poor (only non veggie in a veggie household) DH this he would want to marry me all over again 😂. Might treat him tomorrow 😉

Add Worcestershire sauce to the corned beef mixture is the version I know
