Totally lost inspiration, sick of the same old boring salads. Looking for ideas for healthy and easy to prepare lunches including wrap and pitta fillings, pasta salads etc. Thankyou 😊

Make a few things at the start of the week/Sun night, such as:

Hummous
Roasted veg with feta
Slow-roasted tomatoes
Potato salad/pasta salad
Couscous with raisins, cucumber, red onion etc
Shredded lettuce that you've washed and dried and put in a ziplock
Jar of dressing - I often do half olive oil/half red wine vinegar, garlic granules, s&p and a bit of honey

Then each night you just need to construct, i.e. throw into a lunchbox, rather than actually make. Take a small pot of dressing too or keep it at work.

Would that help or am I preaching to the choir?!

Open sandwiches on toasted rye sourdough. Smoked salmon and cream cheese/paté/ham and cheese/ houmous and cheese. Then veg sticks on the side - celery, cucumber, and some cherry tomatoes.

Today I had a wrap which I spread with a thin layer of mango chutney then filled with spinach and the remains of yesterday's chickpea curry (I left it simmering with lid of whilst we ate so that it reduced down further so it wasn't too sloppy), a sprinkle of red onion and then a drizzle of the raita I'd made for dinner. It was epic!
