Rice paper wraps

I've been enjoying making these and filling with veg and either tofu or tempeh with mix of soy sauce and gochujang paste.
Has anyone any suggestions for how they use them as Im really enjoying them but would like to mix it up a little.
I'm vegetarian but can adapt meat recipes easy enough.

This is a lunch I make a lot - I lightly fry chopped spring onions (2-3) with chopped tomatoes (2-3 medium).Once softened, I add three beaten eggs and scramble together. I usually add chopped dill if I have it. Then assemble scrambled egg mixture in rice paper wraps. Delicious, healthy, quick and low calorie!

Felicity Cloake has an article on this! I love the Guardian's How to make the perfect... series as she tries out a variety of recipes and explains what she does and doesn't like clearly. You can apply your own tastes to the explanation if you don't agree her and pick up idea from what she doesn't go for in her recipe. Not veggie, but lots of ideas.

This sounds lovely and not something I'd have thought of.
