Very easy baking recipes for baking with kids

Hi, my children would like to do some baking but I am really bad at baking. Have had some bad experiences and I really don’t like it as the result is not as predictable as cooking.

I would like some fool proof recipes for baking from scratch . Things like cookies and cakes and maybe something savoury. But very easy I hope I have made that clear 😃
no box mixes.

Vanilla Cupcakes
Crack 3 eggs into a bowl, whatever they weigh add the same weight of caster sugar, self-raising flour, and baking butter (or margarine). Add 1/2 tsp each of vanilla extract and baking powder. Use a hand whisk or stand mixer to mix all together.

This can be used for a Victoria sponge (bake at 180 for 20-25 minutes or until knife/skewer comes out clean) or cupcakes (bake at 180 for 15 minutes or until knife/skewer comes out clean).

For buttercream I like the recipe printed on the side of icing sugar boxes.

I would also check out Janes Patisserie and Cupcake Jemma online as they have quite good straight forward recipes. Just be warned with Cupcake Jemma that she is very frosting heavy, I find I can half the amount she suggests, though her videos are great as you get walked through all stages.

Banana bread is always very forgiving. One egg per ripe banana,100g of self raising flour, 40-50g of butter or oil, bit of something sweet dark chocolate/ honey normally. Multiply by number of ripe bananas, measure by eye.

I cook it in loaf tins but you could use whatever. It comes out slightly different every time but it’s always edible. A sprinkle of icing sugar or melt on some chocolate buttons as it’s cooling to finish.

For savoury, Cornbread and corn muffins are quite quick and easy - and a bonus because they are hard to find pre-made in the UK. Also muffins in general: you can add fruit, veggies (carrot or courgette muffins are wonderful), spices, choc chips, vanilla, and/or any flavouring you want or have handy.

Cheese scones are quite forgiving. I like this recipe.

This is simple, bit faffy pulling all the ingredients together but after that you just add the buttermilk (Tesco sell it as do Sainsburys) you don't even need to knead it just split the mix between the two tins and off you go.

Delicious with butter.

If I can manage it, so can you.

A basic sponge is same in oz of margarine,sugar and self raising flour then half the eggs
so for some lovely fiary cakes you could do a 6oz mix which would be 6 of marg,6 of sugar and 6 of flour and 3 eggs. If you want to make them chocolate you take out as much of the flour as to replace with cocoa.
very very easy.
•whisk the margarine and sugar until the mixture changes from the colour of marg to a much lighter colour,you will suddenly see it change.
•Then add an egg and a little flour (general rule is to add some flour with every egg so it doesn’t curdle.)
• Then continue until all eggs are in and add any left flour and a dash of vanilla essence if you have it.
•Then put into a cupcake cases in a tin. 180 for 20 ish minutes.
•Check at this point carefully.they should be slightly bouncy in the middle.
then for buttercream
for a good bowl full it’s 300 grams of buttter verve’s 400g of icing sugar.
•firstly whisk the margarine
• add in about 1/3icing sugar with good splash of milk then whisk.
• add in rest of icing sugar and whisk together.
• decorate!
once you have that recipe down the possibilities are endless😘👌

I made the "Healthy blueberry muffin" recipe on the BBC website this evening and they were really good, even with a few substitutions (add extra sweetness though). So quick!
