Hiya,

Have plans to try and do a load of batch cooking for the freezer in August as have a manic and stressful Sept. Am seriously lacking confidence in the kitchen and need idiot-proof recipes. What's your easiest 1-pot recipe? Take pity on me, oh wise people of MN!

Do you have a slow cooker? Because I can tell you lotsa recipes for that or there are plenty of slow cooker fb groups where you get fabulous recipes !

Chicken thighs. Buy them skinned & deboned to make things easier.

Add tinned tomatoes, courgette, pepper chunks and onion. Some stock too. ( or any veg of your choice )

Add all those to raw chicken , i never bother braising, into oven for a couple of hours. Easy peasy.

My other favourite to batch cook is bean chilli. For that i buy one of the packet flavourings - the one that has thickener - add 3 or 4 tins of beans, varies depending on what's available, black beans are good & 2 of chopped tomatoes. Onion/shallots & peppers.

Sausage casserole
Spanish chicken stew
Chicken tinga - serve with tacos, tortillas, jacket potatoes or microwave rice
Sweet potato curry - serve with naan bread if you don’t want to cook rice

Easiest things to batch cook are bolognaise and chilli. You can make a massive pot of each and it’s easy to reheat and serve with rice or pasta.
Other than that have a look at the batch lady. I really like her ‘dump bags’ which you just defrost and tray bake.

Bolognaise (I just freeze the sauce and cook pasta or jacket potatoes fresh) - I also add in 1 tbsp Worcester sauce, finely diced peppers and some ready made pesto if I have a jar open

Chuck everything on a tray and stick it in the oven and then half way through you add in a couple more ingredients and back in the over. Super easy.

Lentil, tomato and coconut curry

Finely chop an i onion and some garlic and fry with spices. Add one tin of tomatoes and one of coconut milk, and about 300g of lentils. Simmer until lentils are cooked. Add some stock of it needs it. My kids like potatoes in it too, I usually boil these separately and add them at the end.

My kids are not the types to usually love lentils or vegetables but they really like this.

On of my most popular dinners that everyone loves and is so easy in my house is

Chicken, potatoes cropped, onion, carrot, green beans all thrown on oven dish, add bit of oil, salt, pepper, mixed herbs, garlic cloves and stick in oven

I change this up depending on what veg I have to use or different herbs etc but so easy
