Does anyone still make carrot cake?

Apparently my DH misses carrot cake so I thought I would bake one. Does anyone have a good recipe please?

I swear by this one. I don't use the walnuts and it's gorgeous every time. It's easy to do as a dairy free version for anyone with lactose intolerance too.

Does carrot cake have to have oil..?
I looked everywhere for a recipe without oil then just subbed butter. The flavour was lovely but the texture was very dense…

This Nigel Slater recipe is has been my go to carrot cake for years. The frosting is to die for.

Not for a while but revisited courgette cake today. Recipe needs adjusting - not sweet enough and a bit dense. Otherwise, handy to use up excess courgettes.

I make Janes patisserie's carrot loaf cake regularly. It's a good one and fail safe.

I agree that this one is yummy, made it for my sons 3rd birthday for nursery the teachers liked it so much they requested it again this year for his 4th!

Yes to the Nigel Slater one! I am not a great baker but followed that recipe and it turned out beautifully. DH still talks about it wistfully.

Thank you for all the great ideas. I made the Nigel Slater recipe in the end. Highly recommended for both looks and taste.

Came to suggest this recipe too. It freezes well! I cut the slab in half and freeze. ☺️
