Dinner inspiration - chicken and bacon

Help!

I have some leftover roast chicken (in small pieces, not slices) and some streaky bacon. I had a creamy chicken pasta thing yesterday, so I don't want pasta, or a creamy based sauce.

Any other suggestions, based on those criteria?! I have a pretty well-stocked pantry...

I meant to say you can layer the sauce/cheese/bacon on the chicken bits. It'll work the same as a chicken breast but you won't have to cut it on your plate. Grin

I have both those things. And some baby potatoes I could roast... Do you think it would work with bits of chicken rather than breasts/thighs? I've never made it!

Was going to say throw them in a tomato and veg based pasta sauce but if you dont want pasta have with rice or on jacket potato.

My First thought was a pie but usually do that with a creamy sauce.

Yes the Hunters chicken is fine with bits instead of whole breasts. You could put them in individual serving dishes / ramekin type things with the cheese on top if you have them.

Yeah I'd just layer them in an oven dish with decent sides and just serve it up with a spoon so you don't drop bits everywhere. :)

I always find hunter's chicken a bit of a pain to cut up when it's a huge bit of chicken so you'd probably get a better spread of bacon and cheese per chicken rather than it all falling off with the first bit you have. Smile

If you have Stilton or a blue cheese, stuff the chicken with it, then wrap in the bacon.
Or, chicken and bacon salad.

Hunter's chicken (or is it Hunters' - how many hunters are supposed to eat it, I wonder...?) is on the go.
Roasted baby potatoes thickly sliced in the bottom of a dish, chicken/bacon mix sprinkled on top, BBQ sauce and cheese on top of that. And some courgettes roasting alongside it in the bacon fat left from cooking that off.
Hope it tastes as good as I think it's going to!

I made a quick carbonara thanks to someone suggesting that on this post as I realised I had mushrooms to use up and I needed something quick and easy as it's just me and one of the DC at home tonight.
